Restrained power and lingering aromatics
Cabernet Sauvignon 65% Grenache 25% Carignan 10%
The bunches of cabernet aren't destemmed and are vinified at medium temperature as rapidly as possible using only natural yeasts. The grenache and carignan are vinified separately and are destemmed to avoid any harshness of tannins. Once combined, ageing takes place in cuve and bottle. My aim with Liverna is to balance fullness of flavour with a touch of fruit and satisfying length.

Our vineyards are nestled in the Liverna valley, on the outskirts of Aubais. Ninety three million years ago it was the sea bed, today it's a fertile valley bordered by rocky outcrops of wooded hills and terraces. In my village it's spelt simply with an 'a' at the end but the neighbours add a 't'. I like to think that if you drink Liverna, you're one of us!
